This homemade blackberry cobbler is a simple, comforting dessert made with juicy blackberries and a soft, golden topping. It’s easy enough for a weeknight treat but delicious enough to serve at a family gathering.
Serve it warm with a scoop of vanilla ice cream for an especially satisfying dessert.
Ingredients
For the Blackberry Filling
- 5 cups fresh blackberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- A small pinch of salt
For the Cobbler Topping
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small pieces
- 1/2 cup milk
- 1 teaspoon vanilla extract
How to Make Blackberry Cobbler
1. Prepare the Blackberry Filling
Preheat your oven to 375°F (190°C).
Place the blackberries in a large bowl. Add the sugar, lemon juice, vanilla extract, cornstarch, and salt.
Gently toss until the berries are evenly coated.
Transfer the mixture to a lightly greased 9-inch baking dish and spread it into an even layer.
2. Make the Cobbler Topping
In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter and work it into the flour mixture with your fingertips or a pastry cutter until the mixture resembles coarse crumbs.
Pour in the milk and vanilla extract. Stir just until a soft dough forms. Avoid overmixing, as this can make the topping dense.
3. Assemble the Cobbler
Drop spoonfuls of the topping over the blackberry mixture.
You don’t need to cover every part of the fruit. Leaving a few gaps allows the berries to bubble through as the cobbler bakes.
4. Bake
Place the baking dish in the preheated oven and bake for approximately 35–45 minutes, or until the topping is golden brown and the blackberry filling is bubbling around the edges.
If the topping starts browning too quickly, loosely cover the dish with aluminum foil for the remaining baking time.
5. Cool Slightly and Serve
Remove the cobbler from the oven and let it rest for about 10–15 minutes before serving.
The filling will be very hot when it comes out of the oven and will thicken slightly as it cools.
Serve warm with vanilla ice cream, whipped cream, or enjoy it on its own.
