My daddy grew up on these and now I make them every Sunday morning. Church ladies always ask for the recipe.

1.Preheat the Skillet :

Set a large cast iron skillet over medium heat to warm up. Add 2 to 3 tablespoons of bacon grease or vegetable oil to form a thin layer of hot fat across the bottom.

2.Mix the Batter :

In a medium bowl, whisk together the cornmeal and a pinch of salt. Make a well in the center, crack in the egg, and pour in the milk or water. Whisk until smooth. The batter should be pourable and slightly thinner than pancake batter—similar to heavy cream.

3.Test the Oil Temperature :

Flick a tiny drop of batter into the hot grease. If it sizzles immediately and crisps around the edges, the skillet is ready.

4.Fry the Batter :

Pour small puddles of batter (about 2 to 3 tablespoons each) into the hot grease without crowding the pan. The batter will spread into thin rounds with lacy, wispy perimeters.

5.Cook Until Crisp and Flip :

Fry undisturbed for 2 to 3 minutes until the edges turn deep golden and crisp, and small bubbles appear on top. Gently flip with a thin spatula and cook the second side for 1 to 2 minutes until golden brown.

6.Rest and Finish :

Transfer cooked hoecakes to a towel-lined plate. Stack them to keep them warm and tender while frying remaining batches, adding more grease as needed. Optionally brush the tops with melted butter or extra bacon grease for a glossy sheen.

Key Tips & Variations

The Secret to Lacy Edges: Ensure your oil and skillet are properly preheated before pouring the batter. Pouring batter into lukewarm fat causes the meal to absorb oil rather than crisping immediately.

  • Buttermilk Swap: Substitute regular milk or water with buttermilk to give the hoecakes a subtle tang and an even softer interior crumb.

  • Fluffy Hoecakes: Whisk in 1 teaspoon of baking powder and 1 tablespoon of all-purpose flour for a puffier texture.

  • Savory Add-ins: Stir a small handful of finely chopped onion or a pinch of crushed red pepper flakes directly into the batter before frying.

  • Storage & Safety: Keep raw eggs refrigerated until mixing, and avoid letting mixed batter sit out at room temperature for longer than 1 hour before cooking. Always exercise caution when frying with hot skillet grease.
