1.Preheat and Prepare Dish :

Preheat your oven to 350°F / 175°C. Lightly grease an 8×8-inch baking dish with butter or nonstick spray to ensure easy release and crisp, browned edges.

2.Crisp the Bacon :

Lay the bacon slices in a large skillet over medium heat. Cook until very crisp and deep reddish-brown, about 8 to 10 minutes, turning as needed. Transfer to a paper towel-lined plate to drain and cool.

3.Chop Bacon :

Once cool enough to handle, chop or crumble the bacon into bite-sized bits to ensure even distribution throughout the casserole.

4.Whisk Egg Base :

In a large bowl, vigorously whisk the 10 eggs until the yolks and whites are fully combined and slightly frothy. Whisk in the heavy cream, salt, and pepper until smooth and lightened in color.

5.Combine Ingredients :

Stir the shredded cheddar into the egg mixture until evenly distributed. Fold in most of the crumbled bacon, reserving a small handful to top the casserole before baking.

6.Assemble :

Pour the egg, cheese, and bacon mixture into the prepared 8×8-inch baking dish, smoothing the top with a spatula. Sprinkle the reserved bacon evenly over the surface.

7.Bake :

Place on the middle rack and bake for 25 to 35 minutes. The casserole is done when it is puffed, the edges are golden brown, and the center is set (a knife inserted into the center should come out clean).

8.Rest and Serve :

Remove from the oven and let rest for 5 to 10 minutes to allow the custard structure to set fully. Slice into 6 thick squares and serve warm.

Chef’s Tips & Variations

Food Science Note: Whisking air into the egg-and-cream emulsion before baking creates micro-bubbles that expand in the oven heat. This prevents the baked eggs from tightening into a dense, rubbery texture and yields a tender, soufflé-like crumb.

  • Make-Ahead Friendly: Assemble the entire casserole in the baking dish the night before, cover tightly, and refrigerate. In the morning, bring it to room temperature for 10 minutes before baking (you may need to add 3–5 minutes to the total bake time).

  • Cheese Substitutions: For a smoother melt, replace half of the sharp cheddar with Monterey Jack or Mozzarella. For a bolder, smokier flavor, use smoked gouda or smoked cheddar.

  • Serving Suggestions: Serve alongside sliced tomatoes, fresh avocado, or a light green salad to complement the richness of the dish.

  • Storage & Reheating: Refrigerate leftovers in an airtight container for up to 4 days. Reheat individual slices in a 320°F / 160°C toaster oven for 5 to 7 minutes to re-crisp the surface.
