1.Prep and Season :Prepare steak for searing.

Pat the steak cubes completely dry with paper towels to ensure a deep sear. Season generously with salt, freshly cracked black pepper, and garlic powder.

2.High-Heat Sear :Achieve a deep crust.

Heat olive oil in a large skillet (preferably cast iron) over high heat until smoking. Add the steak cubes in a single layer without overcrowding the pan. Sear undisturbed for 2 minutes to form a brown crust, then flip and cook for another 1–2 minutes until cooked to medium-rare or medium.

3.Garlic Butter Glaze :Infuse richness.

Reduce heat to low. Add the butter and minced garlic to the skillet, basting the steak bites for 1 minute as the butter melts and foams.

4.Garnish and Serve :Finish and serve.

Remove from heat and toss with fresh chopped parsley. Serve immediately with the warm garlic butter drizzled over top.

Culinary Tips & Food Science Insights

Don’t Overcrowd: Sear the steak bites in batches if necessary. Overcrowding the pan causes meat to steam instead of sear, preventing a rich Maillard crust from forming. High Smoke Point Oil: Use a high smoke point oil like olive or avocado oil for the initial sear, adding the butter at the very end to prevent burning.
