1.Combine Base Ingredients :5 minutes.

In a large pot, combine shredded red cabbage, blueberries, dried hibiscus flowers, and 4 cups of water.

2.Simmer & Extract :15 minutes.

Bring the mixture to a boil over medium-high heat. Reduce heat to low and simmer gently for 15 minutes until the cabbage and berries release their deep purple color and flavor into the liquid.

3.Strain & Sweeten :10 minutes.

Set a fine-mesh sieve over a large bowl and pour the liquid through to separate the solids. Stir in the honey (or preferred sweetener) while the liquid is still warm until fully dissolved.

4.Add Citrus & Bottle :3 minutes.

Stir in the fresh lemon juice. Pour the syrup into clean, airtight glass bottles and allow to cool to room temperature.

5.Mix and Serve :Serve.

To serve, pour 2 to 3 tablespoons of syrup over ice, top with sparkling water or still water, and garnish with fresh lemon slices and mint leaves.

Food Science: Color-Changing pH Indicator

Anthocyanin Reactivity: Red cabbage and hibiscus contain high concentrations of anthocyanins, natural water-soluble pigments. These molecules act as natural pH indicators.

  • In neutral water, the infusion appears deep blue/purple.

  • Adding acid (such as lemon juice) lowers the pH, shifting the molecular structure and turning the liquid into a bright, vibrant pinkish-magenta.

Storage & Usage Protocols

  • Refrigeration: Store bottled syrup sealed in the refrigerator for up to 2 weeks.

  • Serving Ratio: Dilute 1 part syrup with 3 to 4 parts water, sparkling water, or iced tea depending on desired sweetness and intensity.
