Ingredients

Category Ingredient Quantity / Preparation
Pasta Spaghetti or Linguine 12 oz
Salt (for pasta water) 1 tsp
Shrimp Large Shrimp 1 lb, peeled and deveined
Sauce & Aromatics Unsalted Butter 4 tbsp, divided
Extra Virgin Olive Oil 2 tbsp
Fresh Garlic 5–6 cloves, finely minced
Fresh Lemon Juice 1 tbsp
Seasonings Fine Salt ½ tsp
Black Pepper ¼ tsp
Italian Seasoning ½ tsp
Red Pepper Flakes ¼ tsp (optional)
Garnish & Finish Fresh Parsley 2 tbsp, chopped
Parmesan Cheese (Optional) Freshly grated, to taste

Instructions

1.Cook the Pasta :

Bring a large pot of salted water to a boil. Add 12 oz of pasta and cook according to package directions until al dente. Reserve 1 cup of starchy pasta water, then drain the pasta and set aside.

2.Season the Shrimp :

Pat the peeled and deveined shrimp completely dry with paper towels. Season evenly with ½ tsp salt, ¼ tsp black pepper, ½ tsp Italian seasoning, and red pepper flakes (if using).

3.Sear the Shrimp :

Place a large skillet over medium-high heat. Add 2 tbsp olive oil and 2 tbsp butter. Once melted and hot, arrange the shrimp in a single layer. Cook for 1 to 2 minutes per side until pink, opaque, and curled into a “C” shape. Transfer cooked shrimp to a plate.

4.Sauté the Garlic :

Reduce the skillet heat to medium and melt the remaining 2 tbsp butter. Add the minced garlic and sauté for 30 to 60 seconds, stirring constantly, until fragrant and softened (do not brown).

5.Deglaze the Pan :

Pour in 1 tbsp fresh lemon juice, scraping the bottom of the skillet with a wooden spoon to release all the savory browned bits.

6.Coat the Pasta :

Add the drained pasta directly to the skillet and toss with tongs. If the pasta appears dry, splash in a little reserved pasta water at a time until the noodles are glossy and evenly coated.

7.Combine and Finish :

Return the cooked shrimp to the skillet and toss gently to heat through. Remove from heat, stir in 2 tbsp chopped fresh parsley, and top with freshly grated Parmesan if desired. Serve immediately with extra lemon wedges.

Chef’s Tips & Science Insights

The Pasta Water Secret: Starchy, salted pasta water acts as an emulsifier. Combining it with butter and olive oil binds the liquid and fats together into a smooth, silky sauce that clings to every strand of pasta instead of pooling at the bottom of the bowl.

  • Prevent Rubberiness: Shrimp cook in 2 to 3 minutes total. Remove them from the pan immediately once opaque; they will continue to heat gently when tossed back with the warm pasta.

  • Avoid Bitter Garlic: Minced garlic burns rapidly in hot fats. Keep the heat around medium and stir constantly for under a minute before deglazing with lemon juice.

  • Thawing Frozen Shrimp: If using frozen shrimp, thaw them completely in cold water and pat thoroughly dry with paper towels. Excess moisture causes shrimp to steam rather than sear.
